Is it possbile to play the new game using quick simulation and/or 3D race simulation only?

I would prefer to focus on management and rider development only, and not having to micromanage in races (effort/sprint train/protection etc). Rather let the races unfold "naturally" and let the riders make spontaneous decisions. Also micromanagement is way to time consuming for me generally, as I prefer a long term game of developing a team and riders from scratch.

I remember in a previos version that quick sim made outrageous results most of the time. Is it still so?

Quick sim has sort of improvement, but it'll never be as realistic as 3D race results, unfortunately.

What about putting all riders on auto during 3D sim. Will they follow predetermined strategies (i.e. try to get in breakaways, contest KOM/sprints etc)?

They will yeah, but you might get disappointed about their choices from time to time.
