Is it possible to give a rider in your team a jersey variation to ride with?
Like Sky has the names of the rider on their shirts.
I tried using the Constant column, but that didn't seem to work..

It is, but in an unpractical way. You could create new countries and make the Sky riders national championships of those countries, and then for their NC jersey assign the same jersey as the normal one just with their name. The problem with this is that it'll mess up negotiations (nationality counts), taking part in NCs/WCs, and even the country bonus in gameplay.
So if you just want to play a single race, f.e., it might even be useful, but for career mode it's not really possible.
Btw, if there's only one rider from that nationality in the team (like Christian Knees), then you don't need to create the new countries, since there are no problems with having 2 NCs in the same country (won't happen normally but if you edit it there's no problem). However it's a bit pointless imo to have only a couple of riders in the team having special jerseys and the others not.
