I don't know exactly how pcm 2012 works because i've played with pcm 2006 , i want to know what's happen if i play only giro - tour - vuelta (maybe win) and no results in "sponsor's races". I will probably lost sponsor next season?

Sponsor will stay with you for the contract period (it'll be fixed). Sponsor happiness doesn't matter (other than in the final year, if you want to renew).
