I would be interested to see if anyone who has played many seasons has scouted a really awesome rider to their team.

What I mean is a rider that isnt 'real', rather comes into the game as old riders retire.

If anyone has had any of these can you please show me a screenshot or tell me about an awesome rider that you scouted?

Well, there are some screenshots. It all changes from DB to DB.

This, for example, is a 2022 SS of the best riders in the world in the A.S.O. DB 2010.
