let´s summarize:
1) Lampre - no top GT rider, but names like Cunego, Petacchi and Simoni sound great! Main disadvantage for me is similar race schedule (excluding PT races) like last season with ASA
2) Saxo Bank - powerful team overall with highest ambitions...probably boring with hard difficulty, but could be very challenging on extreme...disadvantages? I can´t see anything...
3) Rabobank - very interesting team with 2 GC contenders, probably too hard for extreme level...I don´t like Menchov too much, it is biggest disadvantage 
I personally prefer Saxo atm, but it can´t change yet...
You forgotten one else advantage of Saxo Bank - they have the most beautiful jersey fromm your list

of course Menchov isnt "attacante", but Rabobank have very balanced roster: so it could be interesting story in different type of races and what i like the most, you didnt need to scout riders, there is Rabobank CT

i personally like rabo cause i wanna see mollema grow into a star. also saxo would be too easy and uninteresting.

I would say go for Rabobank too! Menchov is a good rider but Gesink is one of the hottest prospects for the future - you could just make the young Dutch captain for the Tour/Vuelta and then let Menchov defend his Giro victory Freire is also a awesome rider and you also have Nuyens and Langeveld for the classics.
